I'm honestly such a sucker for the cheesy holidays. Growing up, my mom always made every holiday special in a small way whether it was green mashed potatoes for St. Patrick's Day or Valentine's Day pajamas. And we still haven't grown out of it - I'm 33 years old and had a Halloween doughnut waiting at my front door this past October 31st. (Please don't stop Mom!)

Winter Reading List

I love reading no matter what season it is. Hot outside? Lay out by the pool with a good book. Cold outside? Curl up by the fire with a page-turner. But if I'm being completely honest with myself as much as I love a good beach read, I think winter is my favorite season of reading. There's something magical about a blanket, cup of hot cocoa, the fire going, and a book in hand. What more could a girl want? 

It's been pretty cold in Atlanta so it should come as no surprise that I went on a total Amazon bender last week and ordered all the books I've been coveting lately. I haven't read any of these and the genres are all over the place BUT this is my current nightstand stack for the winter months. I've had a couple of these on my reading list for a while now and I'm looking forward to finally seeing what they're all about. I recommend having a low-key weekend and diving into one of these good reads!

Chicken Tortilla Soup Recipe

I don't know what a "bomb cyclone" is but honestly I want nothing to do with it. (And that's coming from somebody who loves cold weather.) I just want to know what it feels like to be warm again and stop fussing over our outdoor plants and water faucets. In an effort to make the best of it, our 2018 has been filled with lots of soup and lots of wine. (Probably equal parts. Oops.) In the past couple of months, we've made everything from taco soup and chili to chicken noodle and vegetable. Because January is National Soup Month, I thought I'd share one of our favorite soup recipes! Kat and I were both shocked when we realized we have never blogged about this recipe because it's actually one of our all time faves. You can make a big batch and freeze it into individual servings, it's actually pretty healthy, and it's delicious!

Chicken Tortilla Soup Recipe

  • 1 Tbs Olive Oil
  • 8oz boneless skinless chicken breast, cut into 1/2 inch pieces
  • 1/4 Cup finely diced onions
  • 2 cloves minced garlic
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 1/8 tsp red pepper
  • 14.5 oz can chicken broth
  • 2 Cups frozen whole kernel corn, thawed
  • 15 oz can black beans, rinsed and drained
  • 14.5 oz can Mexican style stewed tomatoes
  • 2 Tbs chopped cilantro
  • Tortillas cut into 1/2 inch strips

Preheat oven to 450 degrees. Heat oil in a Dutch oven over medium heat. Add chicken and cook for 3-4 minutes or until opaque. Add onion, garlic, cumin, salt, chili powder, and red pepper. Cook 1-2 minutes, stirring frequently until garlic and spices are fragrant. 

Stir in broth, corn, beans, and tomatoes (with juice) and bring to a boil over high heat. Reduce heat, cover, and simmer for 15 minutes. 

Meanwhile, spread tortilla strips in a single layer on baking sheets. Bake for 5 minutes, stirring until crisp and lightly brown. Stir cilantro into soup (neither of us like cilantro so we always leave this off) and ladle into bowls. Top with tortilla strips. If you're not too worried about the calories, you can always add a dollop of sour cream or shredded cheese to the top! Note: This makes around 4 servings but you can easily double or triple the recipe for more.

Easy Cranberry Moscow Mule Recipe

I think it's safe to say that New Year's Eve is one of the biggest party nights of the year! Of course, you want to pop open some champagne as the countdown begins but you should probably enjoy a cocktail or two before midnight. Am I right?! 

I fell in love with Moscow Mules a couple years ago (along with the rest of the world) and it was basically so my drink would arrive in a cute copper mug! Who knew I would actaully love the taste? That was a major bonus. Ever since then I've been playing around with different variations to come up with my own recipe and I have finally settled on the perfect holiday Moscow Mule. Whether you're ringing in the new year at home or heading to a party with friends this cocktail will be the perfect addition to your New Year's Eve celebration!


Easy Cranberry Moscow Mule

  • Ginger beer
  • Fresh lime juice
  • Cranberry juice
  • Vodka
  • Crushed ice 
  • Cranberries and limes for garnish

Pour 1 ounce of vodka and 1 tablespoon of lime juice in your glass. Next, add a scoop of crushed ice and fill with ginger beer. Top it off with a splash or two of cranberry juice and garnish with cranberries and a lime wedge. Stir and voila, you've got yourself the perfect little holiday cocktail that tastes as good as it looks!

It's officially the most wonderful time of year! Kat and I had our last show of 2017 this past weekend in Nashville so we're ready to slow things down a bit and enjoy the season. We've had to play catch up a little to ensure we don't miss any of our traditions but we're slowly getting them all checked off!

One tradition we haven't brought back yet since resurrecting the blog is Wallpaper Wednesday. What better reason to kick off our first one than a Christmas edition?! You've probably decked the halls as this point but have you given your tech gear a holiday makeover?
