Homemade Peppermint Pie Recipe

Happy Thursday! This past weekend my girlfriends and I went to the cabin for a little getaway. Is there anything better than top-knotting it all weekend with wine and good friends?! I think our biggest decision of the entire weekend was which movies to veto in our all-day movie marathon. I made this sweet treat for my friends and I’m not naming names…buuut somebody had a piece for breakfast the next day. It must be good! The best part about this peppermint pie? It’s kind of an all occasion dessert. Valentine’s Day? It’s pink! Summer? It’s cold and refreshing! Christmas? It’s pepperminty! It’s a frozen pie so you can also make it ahead. Could this pie BE any more laid back? (Chandler voice.)

Homemade Peppermint Pie

Ingredients:

:: 1 bag of soft peppermints
:: red food coloring
:: 1 carton of vanilla ice cream (1.5 quarts)
:: 8 oz Cool Whip container
:: 1 Oreo Cookie pie crust
:: hot fudge

1 | Let your ice cream sit out for 20-30 minutes so that it gets super soft. Meanwhile, go ahead and remove all of your peppermints from the plastic wrap. Use a rolling pin to crush your peppermints.

2 | Gently stir together ice cream and Cool Whip in a large bowl.

3 | Add approximately 10-12 drops of red food coloring. (Or until you’ve reached your desired shade of pink!)

4 | Stir in crushed peppermints. Leave aside a small handful to use as a garnish later.

5 | Pour your mixture into the Oreo pie crust. You will actually have enough of your ice cream mixture to make 2 pies! Feel free to divide it amongst 2 pie dishes and save one pie for later!

6 | Replace the lid on your pie and freeze overnight.

7 | Before serving, garnish slices with crushed peppermint and hot fudge. YUM!
